Seville orange (or bigarade) is a widely-known, particularly tart/bitter orange which is now grown throughout the Mediterranean region. It has a thick, dimpled skin, and is prized for making marmalade, being higher in pectin than the sweet orange, and therefore giving a better set and a higher yield. It is also used in compotes and for orange-flavoured liqueurs.

Juicy and sweet and renowned for its concentration of vitamin C, oranges make the perfect snack and add a special tang to many recipes; it is no wonder that they are one of the most popular fruits in the world. Oranges are an excellent source of vitamin C, a very good source of dietary fibre and a good source of B vitamins, vitamin A, calcium and potassium.
